Crock-Pot Mediterranean Beef

This can be an effortless recipe. Look for already cut stewed beef, and this will have no prep time!
  • 2 Pounds Stew Beef Cut into Half to 3/4th inch Pieces
  • 2 Cans of Diced Tomatoes Undrained
  • 1 Can of Kidneys Undrained
  • 1/2 Teaspoon of Salt
  • 1/4th Teaspoon of Pepper
  • 3 Cups of Rice
  1. Place beef, tomatoes, and Kidney Beans in crock-pot.
  2. Cover and cook on Low for 8 to 9 hours, or on High for 5 to 6 hours or until beef is fork-tender.
  3. Season with Salt and Pepper.
  4. Cook rice at the end of the anticipated end of Crock-Pot time.
  5. Serve over Rice.
