Crock-Pot Mediterranean Beef
This recipe has got to be one of the easiest to make because about the only prep work involved is opening up a few cans of beans and tomatoes, dumping in some already cut beef stew meat and some basic seasonings.
I mean, if you want to cut your own pot roast into some chunks by all means… but I just pick up a package of the meat already trimmed and cubed by the lovely butcher man.
Thank you butcher man.
Or butcher lady… whichever it is!
Let this simmer away for a good 8 to 9 hours on low and when dinner is just about ready go ahead and cook up some rice or noodles and serve this Mediterranean beef on top.
