Reader Janice Hunter has sent us this great recipe for her Easy Vegetable Beef Chili done up in the crock-pot. Sounds pretty tasty!

Crock-Pot Easy Vegetable Beef Chili

Ingredients

1.5 Lbs. Ground Beef (Or Turkey)
1 (16 Oz.) Bag Frozen Mixed Vegetables
1 (14.5 Oz.) Can Petite Chopped Tomatoes
1 (15.5 Oz.) Can White Beans (Rinsed And Drained)
1 (16 Oz.) Jar Of Your Your Favorite Salsa
3 Cups Cooked Noodles, Elbow Macaroni Or Rice
Sour Cream For Garnish (Optional)

Instructions

  1. Brown meat, drain fat and place meat into crock pot.
  2. Add vegetables, beans, tomatoes and salsa.
  3. Stir cook on low 6-8 hours, high 2-4 hours.
  4. Serve over noodles or rice.
  5. Garnish with sour cream.
  6. Enjoy!
