This is by far my husband’s favorite meal.  He prefers I make it minus the Green Peppers.

Crock-Pot Country Stuffed Green Peppers

Ingredients
  • 4 Green Peppers Cored
  • 1½ Cup Cooked White Rice
  • 1 lb of Hamburger
  • 1 lb Pork Sausage (no sage)
  • 1 16oz Block of Velveeta
  • optional ingredients:
  • ½ Small Onion Chopped
Instructions
  1. Brown pork sausage. Drain and put in bowl.
  2. Cook rice in a separate pan. Mix cooked rice with pork sausage. Set aside.
  3. Brown Hamburger. Drain then put back in skillet.
  4. Add chopped onion and brown for another 15 minutes.
  5. Add sausage and rice mixture to hamburger.
  6. Chop Velveeta into pieces and add to meat mixture.
  7. Heat on low until velveeta melts and mixes with meat. Set aside.
  8. Par-boil cored Bell Peppers.
  9. Fill Bell Peppers with Velveeta meat mixture.
  10. Place Bell Peppers in 6qt crock-pot. Any Extra mixture place around the outside.
  11. Cook on high for 2 hours.
