Crock-Pot Carrot Souffle

Crock-Pot Carrot SouffleAnother great recipe from reader Carol Whetstone.  This looks easy to make and yummy!   Adding powder sugar at the end and it could be passed off as a dessert!!

Crock-Pot Carrot Souffle


1 lb. Baby Carrots, cooked
3 Tablespoons Butter
3 Eggs
3/4 Cup Sugar or Sugar Substitute
3 Tablespoons Biscuit Mix
1 Teaspoons Vanilla Extract
Powdered Sugar (optional)


  1. In blender, combine all ingredients together (may need to do this in a couple batches), blend until smooth.
  2. Spray crock-pot with non-stick spray and pour pureed carrots into crock.
  3. Cook on high about 2 hours or until center is set.
  4. Top with powdered sugar.
