Crock-Pot Carrot Souffle

Ingredients

1 lb. Baby Carrots, cooked
3 Tablespoons Butter
3 Eggs
3/4 Cup Sugar or Sugar Substitute
3 Tablespoons Biscuit Mix
1 Teaspoons Vanilla Extract
Powdered Sugar (optional)

Instructions

  1. In blender, combine all ingredients together (may need to do this in a couple batches), blend until smooth.
  2. Spray crock-pot with non-stick spray and pour pureed carrots into crock.
  3. Cook on high about 2 hours or until center is set.
  4. Top with powdered sugar.

 Another great recipe from C. Whetstone.  This looks easy to make and yummy!   Adding powder sugar at the end and it could be passed off as a dessert!!
