I had Chicken (leftover from Chicken Pot Pie), Mushrooms (leftover from homemade pizza) and Half N Half that I had to use. I decided to make a soup out of it using all items I had on hand.
- 2 16oz Fresh Mushrooms, sliced
- 1 Small Onions, Diced
- 6 Carrots, Diced
- ¼ Cup Stick Butter
- ½ Cup All-Purpose Flour
- 5 Cups Chicken Broth
- 1 Can Cream of Mushroom Soup
- ¼ Teaspoon Dried Thyme
- Dash of Tarragon
- 3 Cups Half and Half Cream
- 2 Cups Cubed or Shredded Chicken
- Salt and Pepper to Taste
- Add Stick Butter and Onions to Skillet and saute.
- Add flour and mix well.
- In Crock-Pot add all ingredients (including onion/flour mixture) except Half and Half.
- Cook 6 hours on low.
- Add Half and Half and stir.
- Cook on low for 30 minutes.
- Serve
